Happy Friday! What do you have planned for the weekend? My husband plays hockey one night a week and I try to cook a quick and light meal for him before he leaves the house. I’m going to put this out there, I don’t love steak. I am not a big red meat kind of girl. However I love this Steak & Blue Cheese Cauliflower Rice bowl. I enjoy it even more when the meat is chopped into tiny bite size pieces. It is packed with nutrients and by using cauliflower rice, it is super low in carbs.
You guys know that I am no chef and that I like to make homes pretty. This is not a food blog and I am not going to pretend that I know how to create recipes. I just want to share some of our favorite healthy meals and shopping tips along the way. I love planning meals for the week. We typically eat 6 out of 7 meals at home with minimally processed ingredients on the menu. I also *attempt* packing my own lunch with leftovers from the night before.

All of this sounds great but “I cannot stand the smell of cauliflower.” According to The Dabbling Chef, you can cut the smell by adding celery seeds or celery leaves when cooking cauliflower. This recipe can also be modified in many different ways. You can sub chicken or shrimp instead of steak. You can sub goat or feta cheese instead of blue cheese.
